What’s On Magazine recently spent the morning with Aldo Zilli cooking recipes from his latest book in addition to learning the tricks of the trade, great presentation tips and how to use seasonal produce.
Our day started early at 6.30am, at Billingsgate fish market in East London, where Aldo took us around the market and showed us all the variety of fish available and what to look for when buying the freshest and best quality fish.
After a hearty breakfast at the market cafe we returned to Zilli Fish in Brewer Street to learn how to prepare and cook some of the fish we had seen.
